Chiroti is a layered, flaky sweet puff from Karnataka and Andhra wedding kitchens. Thin sheets of maida dough are brushed with ghee, stacked and rolled, then deep-fried until the layers separate into golden, crispy flakes. Dusted with powdered sugar and cardamom while still hot. Each piece has dozens of thin, crumbly layers.
