Madatha Khaja is an iconic layered sweet pastry from the Andhra coast — particularly famous in Kakinada. Thin sheets of maida dough are brushed with ghee, folded and rolled many times to create visible layers, then deep-fried and soaked in sugar syrup. Each piece snaps open to reveal crisp, honeyed layers inside.
