We mill our own flour in-house using premium "Jaya" or "MTU 1010" rice varieties sourced from the Godavari belt. Milling it fresh at our factory ensures the flour retains its natural sweetness and has zero moisture, guaranteeing snacks like Chekkalu and Murukku are exceptionally crispy.
Used in paste form for doughs. Its high pungency means we need less quantity to get a strong kick, which prevents adding too much moisture to the dough (which can make snacks soggy).
We use polished white sesame for snacks as they look attractive on darker fried items (like Chekkalu). They toast instantly when the dough hits the hot oil, adding a nutty pop.
We strictly use Gold Drop for its high smoke point and neutral taste. It ensures that deep-fried snacks remain non-greasy and light, allowing the natural flavors of the dal and spices to shine without a heavy oily aftertaste.
In snacks, Urad Dal is crucial for fermentation (in batter) or crunch (in mixtures). The "Gundlu" variety creates a light, airy batter for Chakkilalu, preventing them from becoming rock-hard.
