Vadappalu are the quintessential Andhra crispy dal crackers, a beloved snack often prepared during festivals like Ugadi or for special family occasions. Each thin, round cracker offers a satisfying crispness, carrying the subtle, earthy flavour of dal perfectly seasoned with traditional spices. They evoke the warmth of a grandmother’s kitchen, a simple yet deeply comforting treat that brings everyone together for delightful tea-time moments.
We mill our own flour in-house using premium "Jaya" or "MTU 1010" rice varieties sourced from the Godavari belt. Milling it fresh at our factory ensures the flour retains its natural sweetness and has zero moisture, guaranteeing snacks like Chekkalu and Murukku are exceptionally crispy.
We use fresh G4 chillies, ground into a paste. They provide a sharp, grassy heat that distributes evenly through doughs (like Chekkalu), unlike chopped chillies which can burn during frying.
We use polished white sesame for snacks as they look attractive on darker fried items (like Chekkalu). They toast instantly when the dough hits the hot oil, adding a nutty pop.
Soaked and fried whole for mixtures. The "Desi" variety remains crunchy and nutty after deep frying, unlike larger dals which can turn mealy or floury inside.
Sourced from Telangana, moong dal adds a light, crunchy texture to mixtures and enhances nutritional value with its high protein content.
