AVAKAI/AVAKAYYA Is an authentic Andhra pickle, the name in Telugu language means “AVA” which is mustard (in powder form) and “KAI/GAI” means a raw fruit in this case it is Mango – it is basically a pickle made with Raw Mangoes and mustard powder with the right amount of spices, turmeric powder and specially pounded Chilly powder, we at The Pickle Story use select “Thella Gulabi” (means White Gulabi) variety of mangoes.
- Select, best variety of Thella Gulabi mangoes are used at the right time, the mangoes are not ripe or under grown.
- The mangoes are pickled in a branded best quality Gingerly Oil.
- Zero Preservatives and Zero Colours used, hence in the first few days of making the pickle one would find a dash salt extra, as this acts as a natural preservative, but once the mangoes in the pickle get marinated the salt levels get adjusted.

Gongura is known by many names viz., Red Sorrel leaves, Mesta, Ambada, Kenaf, Sour Spinach, and Roselle. It’s a very tangy leaf, having plenty of medicinal and nutritional values. The leaves are separated from the stocks and are thoroughly cleaned and pickled with spices, dried and roasted red chillies are used instead of chilly powder. UPPU is salt KAI/GAI means a raw fruit in this case it is Mango, it is one of the few pickle without chilly powder, we use Thella Gulabi variety of mangoes cleaned and finely cut into pieces and pickled in mustard (rai) and sesame (til) powder using other spices, salt (a dash extra) and branded gingerly oil.

Mashed Mango with Garlic Pickle – Udikkina Thokku
BOILED/MASHED MANGO PICKLE WITH GARLIC PASTE - UDIKKINA THOKKU
UDIKKINA means boiled and THOKKU means pickle – so basically it is a boiled mango pickle, made famous by Master Chef Kunal Kapoor as MASHED MANGO PICKLE. Fine variety of “Jallal” mangoes are used, after thoroughly washing the mangoes the skin is removed and the mango is cut into chunks and then boiled and cooled. Then the mango paste is pickled using specially pounded chilly powder, garlic paste, spices, turmeric, salt and branded gingerly oil.
