AMLA PICKLE is popular in most of the Indian states, at The Pickle Story we use Banarasi also known as BSR1 quality of gooseberries. The selected gooseberries are first thoroughly cleaned and each gooseberry is pierced with a fork so the gooseberry is marinated thoroughly with the spices and the chilly powder .

  • Select, best variety Banarasi/BSR1 graded Gooseberries are used.
  • The gooseberries are pickled in specially pounded chilly powder, spices, turmeric, salt a branded best quality Gingerly Oil.
  • Zero Preservatives and Zero Colours used, hence in the first few days of making the pickle one would find a dash salt extra, as this acts as a natural preservative, but once the paste in the pickle gets marinated the salt levels get adjusted.
  • The pickle is homemade, with recipes handed down from generations, we follow utmost hygiene, we also follow GMP (Good Manufacturing Practices).
  • All the raw materials are properly cleaned, tested and then used.

The fruit has an extremely sour and pungent taste. Amla is popularly known as Usirikaya in Telugu, these fruits have been a part of Indian cuisines since ages especially pickles. There are numerous health and nutritional benefits of Indian Gooseberry that are recognized by Ayurveda and other scientific communities.

There are multiple ways the Amla is used in the Indian cuisine, the most common thing is to make chutney during the season and nourished with hot rice, dosa and chapathi. Amongst the pickling techniques used are with red chilly powder, there are also pickles made with mustard and sesame seeds. Depending upon the type of the pickle even the shelf life also changes, specially with the amount of salt and oil used act a very important role. Most of the commercially available Amla pickles are added with artificial preservatives and colours, we at The Pickle Story are strongly against use of artificial preservatives and colours hence we use quality oils and organic salt.

At The Pickle Story select quality gooseberries are sorted for similar ripening and are washed with water and dried in shade to make them free of moisture, then the same are pickled using quality red chilly powder specially pounded under our supervision and the required spices as per the recipes handed down from generations are added and then allowed to pickle for a week to absorb all the added spices and then they are preserved. The typical shelf life of these pickles if properly handled can be more than 9 months to a year.

PRECAUTIONS TO BE TAKEN
 Do not use a wet spoon for serving.
 Do not leave a stainless-steel spoon in the pickles and powders, remove them after serving.
 Store the pickles and powders in a cool, dry and dark place – they should not be exposed to direct sunlight or bright light – this increases the shelf life of the products.
