Small Prawns
Rajahmundry, Andhra Pradesh
Freshwater river prawns (Scampi) are preferred over sea prawns for their sweeter taste and firmer texture. They shrink less during frying and absorb spices better.
Garlic
Local Farms (Medak/Zaheerabad), Hyderabad
We source the indigenous "Desi" variety from farms surrounding Hyderabad. Unlike the large, mild hybrid cloves, these small local cloves are exploding with pungency. Sourcing them fresh from nearby farms ensures maximum potency, allowing the sharp garlic flavor to survive the roasting process and give our podis a robust savory kick.
Turmeric
Nizamabad (Armoor), Telangana
Sourced from one of the largest turmeric markets in Asia. Nizamabad turmeric is selected for its strong, earthy aroma and rich golden-yellow pigment. It acts as a powerful natural preservative and provides the base antimicrobial layer essential for long-lasting pickles.
Peanut Oil
Anantapur, Andhra Pradesh
Used specifically for "Chutney" style pickles. Its sweet, nutty profile pairs well with leafy greens (like Gongura), enhancing richness without overpowering the main ingredient.
