Khova Garjalu are deep-fried sweet dumplings with a crispy outer shell and a soft, fragrant filling of khova (mawa), freshly grated coconut, and cardamom. The outer dough is made with maida and ghee, wrapped tight around the filling and deep-fried until golden. The khova filling melts slightly in the heat, making each bite rich and milky.
We use the trusted "Shalimar" brand for its consistent gluten content and fine texture. It provides the perfect elasticity needed for flakey sweets like Kaja or the outer shell of Bobbatlu, ensuring they are crisp yet delicate.
We source our Khova exclusively from the legendary Shankerlal on Mahankali Temple Street, a 150-year-old institution. Their traditional, slow-cooked buffalo milk Khova has a natural sweetness and granular texture that commercially mass-produced khova simply cannot match. It gives our sweets a rich, authentic taste of old Secunderabad.
