Mamidi Tandra is sun-dried mango fruit leather — ripe Banganapalli mango pulp spread thin on clean sheets and laid in the sun until it dries into flexible, sweet-tart strips. No sugar added — the natural mango sweetness concentrates as the moisture evaporates. East Godavari and Krishna district homes have made this every summer for generations.
Used exclusively for Mamidi Tandra (Mango Jelly). We use naturally ripened Banginapalli pulp which is high in natural sugars and low in fiber. This creates a jelly that has a glass-like sheen and intense mango flavor without needing excessive added sugar.
A clean, sulphur-free sugar source is vital for syrup-based sweets (like Gulab Jamun). It creates a clear, impurity-free syrup that doesn't crystallize quickly, keeping the sweets soft and spongy.
